Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Passion Fruit & Pomegranate Panna Cotta.

Panna cotta and crème brulee have been on my list to make for ages, almost since I started the website!  For whatever reason I never ever got round to it and always ended up making something else.  Now I’ve finally made a panna cotta I need to focus my efforts on a crème brulee that is dairy free.

I’ve made this panna cotta with coconut milk and topped with pureed passion fruit and pomegranate seeds to continue the tropical theme.  What other desserts would you like to see a gluten and dairy free version of?

Passion Fruit & Pomegranate Panna Cotta (Gluten Free, Dairy Free)

Difficulty: Intermediate Prep Time 10 mins Cook Time 20 mins Rest Time 4 hrs Total Time 4 hrs 30 mins

Ingredients

Instructions

  1. Pour 150ml of the coconut milk into a small bowl and sprinkle in the gelatine
  2. Set aside for 10 minutes
  3. Place the remaining 250ml of coconut milk in a saucepan over a medium heat
  4. Stir in the maple syrup/honey
  5. Heat to just below boiling
  6. Remove from the heat and whisk in the gelatine mix
  7. Divide between two glasses and chill in the fridge for 4 hours or until set
  8. Top with the passion fruit and pomegranate seeds
