Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Mango Chicken Salad Bowls.

I’ve been focusing on prepping some new recipes for the next few months.  Being at home way more than I’m used to has afforded me to the opportunity to get way ahead with photographing my new recipes.  In the next few months I’ll be posting gluten and dairy free recipes for:

Today’s recipe is for this delicious chicken and mango salad.  I’m going through a little of phase of adding mango into savoury dishes – last night I had BBQ pulled pork tacos with mango salsa for dinner.  The marinade on this chicken makes it super tasty but also keeps it really tender.  You can prep this ahead for a quick weekday lunch.

Mango Chicken Salad Bowls (Gluten & Dairy Free)

Difficulty: Beginner
Servings: 2
Best Season: Summer

Ingredients

For the chicken:

For the mango salsa:

To serve:

Instructions

  1. Mix together the chicken, orange juice, olive oil, lime juice, garlic, oregano, smoked paprika and seasoning
  2. Set aside for 15 minutes to marinade
  3. Pour into a shallow pan over a medium heat and cook for 12 minute or until the chicken is cooked
  4. Make the mango salsa by stirring together the mango, onion, garlic, lime juice and coriander
  5. Allow the chicken to cool and toss together with the salsa, tomatoes and spinach
