Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Mango Chicken Salad Bowls.

I’ve been focusing on prepping some new recipes for the next few months.  Being at home way more than I’m used to has afforded me to the opportunity to get way ahead with photographing my new recipes.  In the next few months I’ll be posting gluten and dairy free recipes for:

  • coffee chocolate chip ice cream
  • pulled pork mac and cheese
  • spiced banana gingerbread
  • chicken kofta curry
  • gooey raspberry brownies
  • Black Forest bircher
  • chocolate peanut butter granola apple bites
  • spiced salmon tacos

And a few more I’ve yet to finalise, so hopefully there is something you are looking forward to on that list.  If there is a recipe you would like to see a gluten and dairy free version of please let me know in the comments below or drop me an email.

Today’s recipe is for this delicious chicken and mango salad.  I’m going through a little of phase of adding mango into savoury dishes – last night I had BBQ pulled pork tacos with mango salsa for dinner.  The marinade on this chicken makes it super tasty but also keeps it really tender.  You can prep this ahead for a quick weekday lunch.
