Rhubarb Bread Pudding (Gluten Free, Dairy Free)

Preheat the oven to 160 oC

Grease a 2 litre casserole dish

Dice the bread into cubes and place in the casserole dish

Place the milk and dairy free spread in a saucepan and bring to the boil

Remove from the heat and pour over the bread

Allow to stand for 10 minutes

Whisk together the eggs, sugar and spices

Scatter the rhubarb slices over the bread

Pour the egg mixture into the casserole dish

Bake in the centre of the oven for 45 minutes
