Mediterranean Salmon (Gluten Free, Dairy Free)
Ingredients
For the salmon:
For the vegetables:
Instructions
To make the salmon:

Spread the minced garlic on the top of each of the salmon steaks

Sprinkle with the mixed herbs and season with salt and pepper

Heat a frying or griddle pan on a medium heat

Add a drizzle of olive oil

Cook the salmon steaks for 12 minutes, turning so all sides are seared
To make the vegetables:

Cut the vegetables into chunky strips, I tend to keep the tomatoes whole
-
Heat a drizzle of olive oil in a pan over a high heat
-
Add the garlic and the vegetables
-
Cook for 5 minutes
-
I served mine with crispy potatoes
