Instructions

Preheat the oven to 170 oC

Place the egg whites in a bowl and whisk until soft peaks form

Add in 40g of the caster sugar and whisk until stiff peaks form

Place the flour, remaining sugar, orange juice, orange zest, lemon zest, vegetable oil and egg yolks in a large bowl

Mix until well combined

Gently fold in the egg whites

Grease a 7" bundt pan or cake tin

Pour the cake mix into the pan

Bake in the centre of the oven for 45 minutes

Remove from the oven and allow to cool in the tin for 15 minutes

Remove from the tin and allow to cool completely

Mix together the water and icing sugar

Drizzle over the cake and top with a sprinkle of orange zest
