Hello everyone, welcome to my latest vegetarian dinner recipe for Gluten and Dairy Free Satay Vegetable Noodle Bowl. At the moment this is one of my favourite recipes as it is quick to put together and super tasty. If you can't find gluten free noodles you can always use gluten free spaghetti as a little cheat. Any leftovers also make a perfect lunch, hot or cold, for the next day.

Ingredients
150g gluten free noodles
300g bag of stir fry mixed vegetables
2tbsp peanut butter
1tbsp maple syrup or honey
1tbsp gluten free soy sauce
1tbsp apple cider vinegar
1tsp ground ginger
2tbsp sweet chilli sauce
1tbsp ime juice
1tsp coriander
Instructions
Cook the gluten free noodles according to the instructions on the packet and set aside
Add a drizzle of olive oil to a wok and stir fry the vegetables on a high heat for a couple of minutes
While the veggies are cooking whisk together the peanut butter, lime juice, maple syrup, gluten free soy sauce, vinegar, ginger, sweet chilli sauce and coriander
Add the noodles and sauce to the pan and cook for a couple of minutes
