Welcome to my latest breakfast recipe for gluten free and dairy free Smoked Salmon Baked Omelette.
When we went into lock down I had this grand plan I would be doing online yoga everyday! Unfortunately I’ve yet to start – maybe this weekend will the one I actually make the effort. I’m also planning to do some baking this afternoon – I’m thinking either chocolate chip buns or strawberry and lemon muffins.
Last week I shared with you a recipe for gluten free and dairy free smoked salmon tarts. If that recipe is on your list to try and you have any leftover smoked salmon then you might want to use it to today’s breakfast idea. I love making baked omelettes because I’m a bit of a lazy cook. Anything that can be mix together quickly in a bowl and put in the oven is my kind of recipe.

Smoked Salmon Baked Omelette (Gluten Free, Dairy Free)
Ingredients

Preheat the oven to 180 oC. Add the olive oil to a shallow pan over a medium heat. Saute the onion, tomatoes, spinach and garlic for a couple of minutes.

Whisk together the eggs, milk, chives, cheese and season with salt and pepper. Stir in the cooked vegetables and flaked salmon.

Divide between two individual casserole dishes and place in the oven. Bake for 25 minutes or until the eggs are set.
