Hello everyone, welcome to my latest recipe for Gluten Free and Dairy Free Peaches & Cream Polenta.
Polenta is naturally gluten free so it makes a grain for us to cook with. I used to think of polenta just as an alternative to rice and pasta – very much in the savoury world. I then found out that is it often used in Mediterranean countries to make a type of breakfast porridge. This makes it perfect if you can’t tolerate gluten free oats.
I’ve quickly pan roasted some peaches in maple syrup and ground cinnamon to top my polenta and added a splash of dairy free milk. I’m also working on a new banana and berry quinoa breakfast bowl with cinnamon dairy free milk so look for that coming soon.

Peaches & Cream Polenta (Gluten Free, Dairy Free)
Place a shallow pan over a medium heat and roast the peach slices in one tablespoon of the maple syrup and cinnamon for about 5 minutes, or until the peach is soft
Place the polenta, 1 tablespoon of the maple syrup and dairy free milk in a small saucepan
Bring to the boil and then simmer for a couple of minutes until the liquid is absorbed
Pour the polenta into a bowl, top with the peaches and a some extra dairy free milk
