Hello everyone, my latest breakfast is for this delicious Gluten Free & Dairy Free Oven Baked Breakfast Tostada. This is a perfect recipe to use up any bits and pieces you have in the fridge. The base of this recipe is a gluten free tortilla sprinkled with a little dairy free cheese. You can then add anything else you like. I’ve gone with egg, salsa and avocado but you could also add chorizo or bacon.
So far this weekend has been pretty chilled out. It is nice to start getting out and about a bit more now. I enjoyed a lovely soya cappuccino and a big piece of chocolate cake from a local cafe. Luckily it was warm enough to sit outside in the sun. I get my second dose of the vaccine next Saturday – fingers crossed the side effects are less this time round.

Oven Baked Breakfast Tostada (Gluten Free, Dairy Free)
Preheat the oven to 180 oC
Place the tortilla sheets on a lined baking sheet
Top with the grated dairy free cheese and make a small indent in the cheese
Carefully crack the egg into the middle of the cheese indent
Bake in the oven until the egss are set - about 10 minutes
Top with the salsa, avocado, fresh coriander and seasoning
