Mediterranean Salmon (Gluten Free, Dairy Free)

Difficulty: Beginner Prep Time 10 mins Cook Time 20 mins Total Time 30 mins
Servings: 4
Best Season: Suitable throughout the year

Ingredients

For the salmon:

For the vegetables:

Instructions

To make the salmon:

  1. Spread the minced garlic on the top of each of the salmon steaks
  2. Sprinkle with the mixed herbs and season with salt and pepper
  3. Heat a frying or griddle pan on a medium heat
  4. Add a drizzle of olive oil
  5. Cook the salmon steaks for 12 minutes, turning so all sides are seared

To make the vegetables:

  1. Cut the vegetables into chunky strips, I tend to keep the tomatoes whole
  2. Heat a drizzle of olive oil in a pan over a high heat
  3. Add the garlic and the vegetables
  4. Cook for 5 minutes
  5. I served mine with crispy potatoes
