My regular followers will know how much I love my pancakes – they are my favourite weekend treat and I love to try new flavour combinations. This weekend I’ve made mocha pancakes – chocolate pancakes with an espresso shot – what better way to start the day?

Mocha Pancakes (Gluten Free, Dairy Free)
In a large bowl stir together the flour, cocoa and caster sugar
Whisk in the egg
Gradually beat in the dairy free milk and espresso until you have a smooth pancake batter
Heat a drizzle of olive oil in a shallow pan over a medium heat
Split the batter into four and cook the pancakes for a couple of minutes on each side
