Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Apple and Ginger Crumble Cake.
I’ve been trying really hard to have proper good healthy meals. I’ve been really busy at work and it is far too easy just to eat junk food. It’s all about the planning and making sure I have the right ingredients in the fridge to prep. After talking about eating healthy I’m going to share a cake recipe!
This week’s baking project is for this very autumnal apple and ginger crumble cake. The cake itself is packed with fresh apples and spiced with cinnamon and ginger. I’ve then made a simple crumble and sprinkled it on top of the cake prior to baking. I served this cake as a pudding when I was round visiting family – also works very well served warm with dairy free custard.

Apple and Ginger Crumble Cake (Gluten & Dairy Free)
Ingredients
For the cake:
For the crumble topping:
Instructions

Preheat the oven to 160 oC
-
Grease and line a 9" round cake tin

Place the chopped apples in a small bowl and toss in the cinnamon

In a large bowl beat together the dairy free spread, caster sugar and light brown sugar

Add in the eggs one at a time beating well between each addition
-
Mix in the flour and ground ginger
-
Stir in the apples
-
Pour the mixture into the cake tin
-
Make the crumble topping by mixing together the plain flour, brown sugar, ginger and melted butter

Pour over the top of the cake

Bake in the centre of the oven for 1 hour and 45 minutes
