Hello everyone, my latest post is for Gluten and Dairy Free Courgette Relish. I made this recipe after having a tonne of courgette’s delivered as part of my fruit and vegetable box. I used some of them in a baking project and then wonder how I could use the rest of them. I decided to develop a simple but delicious recipe for a relish. Hopefully you will have most of the ingredients already in your store cupboard.

Courgette Relish (Gluten & Dairy Free)
Got loads of leftover courgettes? Then try out my simple delicious recipe for Gluten and Dairy Free Courgette Relish.
Cut the ends of the courgettes and then dice into small cubes. Peel and core the apple then cut into small chunks. Dice the onion and pepper.
Place the courgette, apple, onion, pepper, garlic, brown sugar, vinegar, chilli and seasoning in a large pan. Bring to the boil then simmer for 80 minutes with the lid off or until a thick relish consistency. Spoon into two sterilised jars.
