Banana Cinnamon Muffins (Gluten Free, Dairy Free)

Instructions

  1. Preheat the oven to 180 oC
  2. Blend the oats to make a coarse flour
  3. Pour the milk into the oat flour and leave for 5 minutes
  4. In a large bowl mix together the cinnamon, flour and baking powder
  5. In another bowl beat together the sugar, oil, egg white and mashed banana
  6. Add this and the oat milk mixture to the dry ingredients
  7. Mix until well combined
  8. Grease or line a 12 hole muffin
  9. Divide the mixture between the 12 muffin cases
  10. Make the topping by mixing together the oats, cinnamon and sugar
  11. Sprinkle on top of the muffins
  12. Bake in the oven for 25 minutes
