Pumpkin Bread (Gluten Free, Dairy Free)

Preheat the oven to 180 oC

Place all the ingredients, with the exception of the pumpkin seeds, in a large bowl

Mix until well combined

Grease and line a 1lb loaf tin

Pour the cake into the loaf tin

Sprinkle the pumpkin seeds over the top of the cake

Bake in the centre of the oven for 45 minutes

Allow to cool for 10 minutes then remove from the loaf tin to cool completely
