Hello everyone, I've been back in the kitchen and my new dinner recipe is for Gluten and Dairy Free Leek & Bacon Risotto.

Ingredients
  • 1 tablespoon olive oil
  • 1 garlic clove (minced)
  • 1 large leek (sliced)
  • 4 slices smoked bacon (diced)
  • 150 grams risotto rice
  • 750 milligrams vegetable stock
  • 40 grams dairy free cheese (grated)
  • 1 teaspoon basil
  • salt and pepper (for seasoning)
Instructions
  1. Put the olive oil and garlic in a large pan and saute over a medium heat for 1 minute

  2. Add in the bacon and leek and cook for 5 minutes

  3. Stir in the risotto rice

  4. Add the vegetable stock one ladle at a time stirring until the liquid is fully absorbed

  5. Taste the rice to make sure it is properly cooked, add more liquid if required

  6. Stir though the cheese, season with salt and pepper and add the basil
