Harissa Chicken Rice Bake (Gluten Free, Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Harissa Chicken Rice Bake. This dish is a little like a baked risotto and is packed with peppers, onions, chicken and bacon.

I've used harissa paste to add a delicious flavouring to this dish without too much spice. If you don't have harissa paste you can always substitute this with 2 teaspoons of smoked paprika and pinch of chilli flakes.

Ingredients
  • 1 tablespoon olive oil
  • 1 onion (diced)
  • 1 pepper (diced)
  • 2 chicken breasts (diced)
  • 100 grams bacon lardons (diced)
  • 2 garlic cloves (minced)
  • 2 teaspoons harissa paste
  • 2 tablespoons fresh parsley
  • 100 grams dairy free cheese (grated)
  • 400 grams basmati rice
  • 800 milligrams chicken stock
  • salt and pepper (for seasoning)
Instructions
  1. Preheat the oven to 180 oC

  2. In a large pan add the olive oil, pepper, onion, chicken and garlic over a medium heat and brown for 10 minutes

  3. Stir in the rice and harissa paste, pour in the chicken stock, bring to the boil and simmer for 15 minutes or until the liquid is absorbed and the rice cooked

  4. Stir through the parsley, seasoning and half the grated dairy free cheese

  5. Pour into a casserole dish, top with the remaining cheese and bake for 15 minutes
