Preheat the oven to 180 oC
In a large pan add the olive oil, pepper, onion, chicken and garlic over a medium heat and brown for 10 minutes
Stir in the rice and harissa paste, pour in the chicken stock, bring to the boil and simmer for 15 minutes or until the liquid is absorbed and the rice cooked
Stir through the parsley, seasoning and half the grated dairy free cheese
Pour into a casserole dish, top with the remaining cheese and bake for 15 minutes
