Hello everyone, welcome to my last Christmas post for Leftover Turkey Curry (Gluten Free and Dairy Free).

Christmas was a bit different than usual this year but I was lucky enough to still have my immediate family round for the day.  We had a nice time opening presents, playing with Eva’s toys and then having a big Christmas dinner.

I’m used to having people stay over the Christmas holidays so it was a bit odd when everyone went home.  I made the most of it by having a relaxing bath and pampering myself with some lovely new skincare products I got for Christmas.

Every year I’ve had the website I’ve wanted to post a recipe for a simple but tasty curry that uses up your leftover turkey and this year I’ve final got round to it.

Leftover Turkey Curry (Gluten Free, Dairy Free)

Ingredients

Instructions

  1. Heat a drizzle of olive oil in a large shallow pan

  2. Add the onion, garlic and ginger and saute for a couple of minutes

  3. Add the chicken stock, korma paste, coconut milk and cooked turkey

  4. Bring to the boil and simmer for 20 minutes

  5. Stir in the ground almonds, coriander and season with salt and pepper

  6. Serve with pilau rice
