Cinnamon Toast with Summer Fruit Compote (Gluten Free, Dairy Free)
Ingredients
For the French Toast:
For the summer fruit compote:
Instructions

To make the compote, put the cornflour, lemon juice, caster sugar, fruit and water into a small saucepan

Cook for five minutes until the fruit has softened and the juice has thickened

In a bowl whisk together the eggs, milk, cinnamon and sugar

Heat a drizzle of olive oil in a frying pan over a medium heat

Dip the bread into the egg mixture and place immediately into the frying pan

Cook on each side for a couple of minutes until golden brown

Put two slices on plate and serve with the summer fruit compote on top
