Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Potato Patties.

This is one of those simple dishes that just tastes so good and it’s perfect as a starter or as a light lunch. As with most of my recipes you can customise this to your own tastes by adding different vegetables and herbs.

Ingredients
  • 450 grams potatoes (peeled and cubed)
  • 1 onion (finely diced)
  • 1 pepper (finely diced)
  • 2 teaspoons coriander leaf
  • salt and pepper for seasoning
  • 1 teaspoon garlic paste
  • 1/2 teaspoon ground cumin
  • 1 tablespoon grated dairy free cheese (optional)
  • 3 tablespoons gluten free plain flour
Instructions
  1. Place the cubed potatoes in a large pan of salted water
  2. Bring to the boil and then simmer for 15 minutes or until tender
  3. Drain the potatoes then return them to the pan
  4. Cook on a low heat for 1 minute, this dries out the potatoes
  5. Mash the potatoes
  6. Stir in the onion, peppers, coriander, seasoning, garlic, cumin, cheese and flour
  7. Form into small patties using about 1 tablespoon of mixture
  8. Chill in the fridge for 30 minutes
  9. Add a drizzle of olive oil in a shallow pan over a medium heat
  10. Cook the patties for 2 minutes on each side or until golden and crisp
  11. Serve immediately with a crisp salad
