Cheese and Tomato Salad

Ingredients
  

  • 1 gluten free pitta bread
  • 6 plum tomatoes quartered
  • 1//2 cucumber sliced
  • 1/2 small red onion diced
  • 40 g dairy free cheddar diced
  • 1 tbsp olive oil
  • 2 tbsps apple cider vinegar
  • 2 large handfuls of rocket

Instructions
 

  • Preheat the oven to 180 oC
  • Tear the pitta into bite sized chunks
  • Place on a baking sheet and bake in the oven for 15 minutes or until crisp and golden
  • Allow to cool
  • Combine the pitta, tomatoes, cucumber, onion, cheddar and rocket
  • Whisk together the olive oil and apple cider vinegar
  • Drizzle over the salad and serve
