Description

Yellow Split Pea Soup

Ingredients
  • 2 onions (diced)
  • 2 garlic cloves (minced)
  • 4 smoked bacon slices (diced)
  • 1 teaspoon paprika
  • 250 grams yellow split peas
  • 1250 milliliters vegetable stock
  • salt and pepper for seasoning
  • 2 teaspoons basil
Instructions
  1. Heat a drizzle of olive oil in a large pan over a medium heat
  2. Add the onions, bacon, garlic, basil and paprika and sauté for 5 minutes
  3. Wash the yellow split peas and add to the pan
  4. Stir in the stock and bring to the boil
  5. Simmer on a low heat for an hour
  6. Add more stock if the soup is too thick
  7. Season to taste with salt and pepper
  8. Blend until smooth then divide between four bowls
