Hello everyone, welcome to my easy recipe for Gluten and Dairy Free Tuna Melt Toastie.

For years at work we have run numerous schemes that give young adults the opportunity to come and work in Finance and learn about being in an office environment.  I’ve always enjoyed having people intern with me but never fully appreciated the impact schemes like this have on people - until yesterday.  I was really touched when someone who had interned with us 4 years ago got in touch out of the blue to say that it had really influenced what he wanted to do as a career and was finishing his degree in Finance.  That totally made my day and I’m really proud of his achievements.

Now I have found decent gluten free bread I’ve been enjoying some nice toasted sandwiches and French toast recipes.  I’ve made a lovely flavoured tuna sandwich filler with an added bit of crunch from the red peppers.  Great for a lunch or served with salad and fries for an easy dinner.

Ingredients
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • Pinch of chilli flakes
  • 170 grams can of tuna (drained)
  • 1 tablespoon red onion (diced)
  • 1 tablespoon red pepper (diced)
  • salt and pepper (for seasoning)
  • 4 gluten free bread slices
  • 4 tablespoons dairy free cheese
Instructions
  1. Preheat the oven to 200 oC

  2. Mix together the mayonnais, lemon juice, chilli flakes, tuna, onion and peppers

  3. Season to taste

  4. Divide between 2 slices of gluten free bread

  5. Top with the dairy free cheese and the remaining 2 slices of bread

  6. Cut in half and place on a baking sheet

  7. Bake in the oven for 8 minutes or until the bread is golden and the cheese melted
