  • 1 large chicken breast (diced)
  • 1 onion (diced)
  • 1 pepper (diced)
  • 1 tablespoon olive oil
  • 1 garlic clove (minced)
  • 1 teaspoon basil
  • 70 grams mayo (double check it is df)
  • 35 grams sweet chilli sauce
  • 35 grams peanut butter
  • salt and pepper (for seasoning)
  • 65 grams prawn crackers
  1. Heat the olive oil in a pan over a medium heat

  2. Add in the chicken, onion, pepper and minced garlic

  3. Saute for 10 minutes

  4. Set aside to cool

  5. Place the mayo, peanut butter, sweet chilli sauce and basil in a bowl

  6. Stir until well combined

  7. Season to taste

  8. Stir the chicken and vegetable mix

  9. Scoop into a bowl and serve with the Thai prawn crackers
