This Gluten and Dairy Free Spicy Prawn Soup is perfect for lunch as a light dinner, you can adjust the amount of spice to suit you.
Add the olive oil into a saucepan over a medium heat
Saute the pepper, onion and garlic for 5 minutes
Stir in the sriracha, paprika, passata, vegetable stock, basil and thyme
Bring to the boil
Stir in the rice and simmer for 8 minutes
Add in the prawns and cook for another 5 minutes or until the rice and prawns are cooked
Season to taste
Divide between two bowls and serve
