This Gluten and Dairy Free Spicy Prawn Soup is perfect for lunch as a light dinner, you can adjust the amount of spice to suit you.

  • 1 tablespoon olive oil
  • 1/2 yellow pepper (finely diced)
  • 1 small onion (sliced)
  • 1 garlic clove (minced)
  • 1 teaspoon smoked paprika
  • 1 teaspoon Sriracha or other hot sauce
  • 200 milliliters passata
  • 350 milliliters vegetable stock
  • 1 teaspoon basil
  • 1/2 teaspoon thyme
  • salt and pepper (for seasoning)
  • 60 grams rice
  • 150 grams prawns (peeled and prepped)
  1. Add the olive oil into a saucepan over a medium heat

  2. Saute the pepper, onion and garlic for 5 minutes

  3. Stir in the sriracha, paprika, passata, vegetable stock, basil and thyme

  4. Bring to the boil

  5. Stir in the rice and simmer for 8 minutes

  6. Add in the prawns and cook for another 5 minutes or until the rice and prawns are cooked

  7. Season to taste

  8. Divide between two bowls and serve
