Try out my new lunch recipe for this delicious and hearty Gluten and Dairy Free Smoked Sausage Gumbo

  • 1 tablespoon olive oil
  • 100 grams smoked pork sausage (sliced)
  • 1 onion (chopped)
  • 1 green pepper (chopped)
  • 2 garlic (minced)
  • 1 teaspoon dried basil
  • 400 milliliters chicken stock
  • 400 grams chopped tomatoes
  • 1 teaspoon hot sauce (I used sriracha)
  • 100 grams brown rice
  1. Heat the oil in a large pan over a medium heat

  2. Add in the smoked sausage, onion, pepper, garlic and basil
  3. Saute for 5 minutes
  4. Add the chicken stock, chopped tomatoes, rice and hot sauce
  5. Bring to a boil
  6. Reduce the heat so the soup is simmering and cook for 25 minutes or until the rice is tender
  7. Split between four bowls and serve
