Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Prawn Tom Yum Soup.
I can't believe how cold it has been over the last few days and it is to be -7 tomorrow night! As I live near the coast it is not often we get snow and ice but it has been a white out for the last couple of mornings. It was all too much for Ollie cat and he spent the day curled up in a ball in bed - some days I actually wish I was Ollie. Luckily the next two recipes I have to share this week are real winter warmers - a spicy beef pasta bake and this lovely prawn tom yum soup.
Tom Yum soup is a Thai soup with a hot and sour flavour, Tom Kha is similar but has a coconut milk base. This recipe is perfect if you want a healthy lunch but are short on prep time as it only takes 15 minutes. I kept it simple by using stir fry veg, prepped prawns and tom yum paste which I picked up in Tesco. As with most of my recipes you can customise this to suit your own tastes - pick what veggies you want to use and you can swap the prawns for chicken or extra vegetables.
