Morning everyone, welcome to my latest recipe for these delicious Gluten and Dairy Free Tomato, Chorizo and Avocado Canapes.
I think the most neglected section of my website is appetisers. I tend to find it difficult to create recipes to include.
It’s probably because my website is more a record of what I eat rather than me making things specifically to photograph for the website, if that makes sense. I definitely have more of a sweet tooth so tend to have a main and a dessert rather than an appetiser.
This recipe is for a perfect little tasty bite of gluten free crusty bread, avocado, tomatoes and chorizo. Always double check your chorizo as sometimes they can sneak a bit of dairy into it. I actually served these for lunch along with my roasted tomato and chilli soup.

Tomato, Chorizo and Avocado Canapes (Gluten & Dairy Free)
Ingredients
Instructions

Cut the panini rolls into slices

Preheat the oven to 180 oC

Place the bread slices on a baking sheet and bake for 10 minutes or until crisp

Set aside to cool
-
Fry the chorizo until crisp
-
Set aside on a piece of kitchen towel
-
Slice the tomato then cut the slices in half
-
Mash the avocado and stir in the lime juice, garlic and season with salt and pepper

Spread the avocado on the bread and top with the chorizo and tomato
-
Sprinkle with some fresh coriander or basil
