Description

Gluten and Dairy Free Chorizo, Tomato and Spinach Pasta Salad is a perfect recipe for lunch or for a light summer dinner

Ingredients
  • 8 chorizo (double check it is df)
  • 150 grams gluten free pasta (cooked per instructions on packet)
  • 1 tablespoon chives (chopped)
  • large handful of spinach
  • 2 tablespoons mayonnaise (double check it is dairy free)
  • 1/2 teaspoon paprika
  • 2 tablespoons sun dried tomatoes
  • salt and pepper for seasoning
  • 2 tablespoons dairy free natural yoghurt
  • 1 teaspoon olive oil
Instructions
  1. Mix together the paprika, dairy free natural yoghurt, mayonnaise and olive oil

  2. Stir in the chorizo, gluten free pasta, sun dried tomatoes, chives and spinach

  3. Season with salt and pepper
  4. Divide between two bowls and serve
