Ingredients
  • 2 chicken breasts (diced)
  • 1 green pepper (diced)
  • 1 onion (diced)
  • salt and pepper (for seasoning)
  • 1/2 tsp turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 3 garlic cloves (minced)
  • 3 tsp mild curry powder
  • 400 ml coconut milk
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 tbsp olive or vegetable oil
  • 1 tbsp fresh parsley
Instructions
  1. Place the olive oil in a large shallow pan over a medium heat

  2. Add in the chicken, onion, pepper, garlic and saute for 5 minutes

  3. Stir in the seasoning, turmeric, cinnamon, ginger, curry powder, coconut milk, lime juice and brown sugar

  4. Simmer for 15 minutes or until the chicken is cooked

  5. Stir through the fresh parsley

  6. Serve with rice
