Lunch times just got more exciting with this recipe for Gluten and Dairy Free Chicken Club Pasta Salad

Ingredients
  • 2 smoked bacon (cooked and diced)
  • 1 cooked chicken breast (cut into cubes)
  • 100 grams gluten free pasta (cooked per instructions on packet)
  • 1/2 green pepper (finely diced)
  • 1/2 small red onion (diced)
  • 8 cherry tomatoes (halved)
  • 30 grams dairy free cheese (cut into chunks)
  • salt and pepper (for seasoning)
  • 2 tablespoons mayonnaise (double check it is dairy free)
  • 2 tablespoons dairy free natural yoghurt
  • 1 garlic clove (minced)
  • 1 teaspoon olive oil
  • 2 teaspoons lime juice
  • 1 teaspoon basil
Instructions
  1. In a large bowl place the smoked bacon, chicken, gluten free pasta, pepper, onion, dairy free cheese and cherry tomatoes

  2. In a smaller bowl stir together the mayo, dairy free natural yoghurt, olive oil, lemon juice, basil and minced garlic

  3. Season with salt and pepper

  4. Pour the dressing over the pasta salad and mix until the pasta is well coated
