Easy Egg & Cheese Quesadillas (Gluten Free, Dairy Free)

  • 2 gluten free tortilla wraps
  • 4 eggs
  • 2 tablespoons dairy free milk
  • 1 teaspoon dairy free spread
  • 4 tablespoons dairy free grated cheese
  • salt and pepper
  1. Whisk together the eggs, dairy free milk and seasoning

  2. Melt the dairy free spread in a small pan over a medium heat

  3. Scramble the eggs for about 3 minutes

  4. Add the eggs to one half of each of the tortillas, top with the dairy free cheese and then fold shut

  5. Heat a shallow pan over a high heat, add the quesadillas and toast on each side for a couple of minutes

  6. I served mine with some mashed avocado
