Cheese and Tomato Baked Quinoa (Gluten Free, Dairy Free)

Rinse the quinoa with water

Place in a pan with 430ml boiling salted water

Cook until the water is absorbed, about 10 minutes

Preheat the oven to 180 oC

Place the onion, pepper, chilli and garlic in a shallow pan and sauté for 5 minutes

Whisk the eggs in a large bowl

Stir in the cooked quinoa, sautéed vegetables, tomatoes, basil, oregano, cheese and seasoning

Pour into a greased baking dish

Bake for 25 minutes

I served mine topped with some fresh spinach and extra tomatoes
