Preheat the oven to 180 oC and line and grease a 9" round cake tin

Beat together the eggs and two types of sugar

Add in the oil and beat well

Stir in the flour, cinnamon and xanthan gum and mix until well combined

Mix in the chopped apples

Pour the cake mixture into the lined/greased baking tin and bake in the centre of the oven for 75 minutes

Remove from the oven and start making the toffee sauce which is perfect while the cake is still warm

In a medium sized saucepan add in the brown sugar, dairy free milk and spread

Bring to the boil while stirring continuously

Boil for 2-3 minutes and then pour over the top of the cake
