Slow Cooked Apple Glazed Gammon Shanks (Gluten Free, Dairy Free)

Instructions

Place the gammon shanks and 100ml of apple juice in the slow cooker

Cook on low for 7 hours

Preheat the oven to 180 oC

Place the gammon shanks in a casserole dish

Make the apple glaze by placing the remaining apple juice, 1 tablespoon of brown sugar and cornstarch in a small saucepan

Bring to the boil and simmer for a couple of minutes until thickened

Pour over the gammon

Place the other tablespoon of brown sugar, the dairy free spread and apples into a small saucepan

Cook over a medium heat until soft

Add to the casserole dish

Bake in the oven for 10-15 minutes

Serve with fries and a green salad
