Hello everyone, welcome to my latest recipe for gluten and Dairy Free Indonesian Tomato Soup.

The weather has been so wet and miserable last week so I am back eating soup again. I got absolutely soaked on the way home from work the other night.

I had this amazing Indonesian tomato soup one day when I was out for lunch and decided to have a go making it at home.

It is a lovely rich soup with lots of garlic, ginger, lime juice, tomatoes and some coconut milk. Perfect for a wet evening in watching the tv.

Description

A tomato soup blend with lovely spices and creamy coconut milk

Ingredients
  • 2 garlic cloves (minced)
  • 1 teaspoon ground ginger
  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 800 grams chopped tomatoes
  • 200 milliliters coconut milk
  • 1 teaspoon fish sauce
  • 1 tablespoon lime juice
  • 1-2 dash sriracha
  • Salt and pepper for seasoning
  • Fresh coriander
Instructions
  1. Place the olive oil, garlic, ginger and onions in a large pan over a medium heat
  2. Sauté for 5 minutes
  3. Pour in the chopped tomatoes, coconut milk, fish sauce, lime juice and sriracha
  4. Bring to the boil and simmer for 15 minutes
  5. Blend until smooth
  6. Season to taste with salt and pepper
  7. Serve with some fresh coriander
