Ingredients
    For the salad:
  • 4 slices smoked bacon slices (diced)
  • 2 chicken breasts
  • salt and pepper (for seasoning)
  • 2 tsp rosemary
  • 2 handfuls large handfuls of spinach
  • 8 cherry tomatoes (halved)
  • 1/2 small red onion (diced)
  • 1 avocado (sliced)
  • For the dressing:
  • 2 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp chives
  • 1 garlic clove (minced)
  • salt and pepper (for seasoning)
Instructions
  1. Fry the bacon in a shallow pan until crisp and set aside
  2. Season the chicken with salt, pepper and rosemary
  3. Cook for 6 minutes in the shallow pan on each side
  4. Cut into slices and set aside
  5. Plate up the chicken, bacon , spinach, tomatoes, red onion and sliced avocado

  6. Whisk together the ingredients for the dressing
  7. Pour over the salad
