Christmas Pie Bites (Gluten & Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Christmas Pie Bites.

I’ve got this post and one other cake recipe to share before Christmas.  I’m not going to do my usual meal plan and three new posts next week as I’m sure you have a lot going on with Christmas.  I have a couple of round ups I’ll share between Christmas and New Year and then it will be back to business as usual.

This year I bought a giant jar of Christmas mincemeat and have a fair bit leftover in the fridge.  As I had already had dinner at lunchtime I made some pancakes for a treat when I got home from work.  I added a tablespoon of mincemeat to the batter and dusted the finished pancakes with icing sugar.  I wish I had taken a photo for the website - they tasted amazing.

Another use for leftover mincemeat is these Christmas Pie Bites.  I’ve based this recipe on my peppermint crunch truffles and adjusted it to have a Christmas pie flavour.

Ingredients
    For the filling:
  • 90 grams Gluten free digestive biscuits (Crushed)
  • 30 grams Dairy free cream cheese
  • 75 grams Christmas mincemeat
  • 1 tablespoon Icing sugar
  • 50 grams Dairy free dark chocolate (Melted)
  • For the Coating:
  • 100 grams Dairy free dark chocolate (Melted)
  • 30 grams Dairy free white chocolate (Melted)
Instructions
  1. Mix together the crushed gluten free digestives, Christmas mincemeat, dairy free cream cheese, icing sugar and melted dairy free dark chocolate

  2. Place in the fridge to firm up, about one hour

  3. Divide into 10, roll into balls and place on a sheet of baking paper

  4. Dip in the melted dark chocolate and place back in the fridge to set

  5. Decorate with the melted dairy free white chocolate
