Hello everyone, welcome to my latest recipe for Gluten and Dairy free Chilli Chicken Pasta Salad.

I'm not sure why but I find that lunch is the most difficult meal of the day for me to get inspired for new gluten and dairy free recipes.

This simple pasta salad can easily be prepared the night before for a packed lunch the next day.

Ingredients
  • 1 cooked chicken breast (cut into cubes)
  • 150 grams gluten free pasta (cooked per instructions on packet)
  • 1/2 teaspoon mild chilli powder
  • 1/2 teaspoon smoked paprika
  • 1 red pepper (finely diced)
  • 2 spring onions (finely sliced)
  • salt and pepper for seasoning
  • 2 tablespoons dairy free natural yoghurt
  • 2 tablespoons mayonaise (check it is dairy free)
  • 1 tablespoon olive oil
  • 2 teaspoons fresh lime juice
  • handful of fresh parsley
Instructions
  1. Mix together the chilli, paprika, natural yoghurt, mayo, olive oil and lime juice
  2. Stir in the chicken, pasta, pepper and spring onions
  3. Season with salt and pepper
  4. Top with some fresh parsley
