Hello everyone, welcome to my latest recipe for this delicious Gluten and Dairy Free Chicken & Avocado Soup.

Still playing catch up with the website - promise I will be back to my organised self next week.  Recipes this week have definitely been heavily weighted towards the end of the week!

Today's recipe is for this super tasty chicken avocado soup.  Unfortunately this soup had a bit of a sad ending - I have a lovely bright blue cast iron pot that sits on the cooker.

I used it to make this soup, had some for lunch, took the photograph and then forgot the rest of it was sitting in the pot on the cooker as it didn’t look out of place.  I was well angry when I discovered it the next day and had to get rid of it - let’s just say it’s not the first time I've done this.

Ingredients
  • 1 large chicken breast (diced)
  • 1 tablespoon olive oil
  • 1 onion (diced)
  • 1/4 teaspoon chilli flakes
  • 1 garlic clove (minced)
  • 6 cherry tomatoes (quartered)
  • 850 milliliters chicken stock
  • 1 avocado (diced)
  • 1 tablespoon lime juice
  • 1 tablespoon fresh coriander
  • salt and pepper (for seasoning)
Instructions
  1. Add the olive oil to a large pan over a medium heat

  2. Stir in the onion, chilli flakes and garlic

  3. Sauté for 5 minutes

  4. Stir in the cherry tomatoes, chicken stock and seasoning

  5. Bring to the boil and add in the chicken breast

  6. Cover with a lid and cook for 15 minutes or until the chicken is cooked

  7. Remove the chicken from the pan, shred and then return to the pot

  8. Add in the coriander and lime juice

  9. Divide between two bowls and top with the diced avocado

  10. I served mine with some tortilla chips, dairy free cream and dairy free cheese
