Butternut Squash, Spinach and Bacon Soup (Gluten & Dairy Free)

Hello everyone, welcome to my latest recipe for this delicious Gluten and Dairy Free Butternut Squash, Spinach and Bacon Soup.

It has been so cold and wet this weekend I'm back making winter soups.  There was even some snow the other day when I was on the way to work.  I'm convinced every time I have a plaster cast on my arm the weather is horrible as I struggle to get a jacket to fit over my giant arm.  I'm really looking forward to the spring and summer months and focusing on different styles of recipes like salads, ice creams and beautiful smoothie bowls.

As I'm writing this post I'm enjoying a big bowl of this butternut squash, spinach and bacon soup.  I know I always say this but it is up there as one of my favourite soups - the smokiness of the bacon just makes it extra special.

I also have a new recipe in the oven for strawberry and coconut slices.  Fingers crossed they work out well and I'll share the recipe soon.

Ingredients
  • Ingredients
  • 1 medium sized butternut squash (peeled and diced)
  • 2 medium sized sweet potatoes (peeled and diced)
  • 2 carrots (peeled and sliced)
  • 1 onion (diced)
  • 2 garlic cloves (minced)
  • of chilli flakes (optional)
  • 900 milliliters vegetable stock
  • 125 milliliters dairy free milk
  • 300 grams bacon (diced)
  • 3 large handfuls of spinach
  • salt and pepper (for seasoning)
Instructions
  1. Add a drizzle of olive oil to a large saucepan over a medium heat
  2. Saute the bacon, onion, chilli flakes and garlic for 5 minutes
  3. Stir in the carrots, butternut squash and sweet potatoes
  4. Pour in the vegetable stock and simmer for 20 minutes
  5. Add the spinach and milk and simmer for another 5 minutes
  6. Season with salt and pepper
  7. Blend and serve
