Date & Walnut Loaf (Gluten Free, Dairy Free)

Preheat the oven to 160 oC

Place the dates and dairy free spread into a large bowl

Sprinkle 1 teaspoon of the baking powder over the dates

Pour the boiling water into the bowl and leave for 10 minutes

Stir in the flour, ground rice, xanthan gum, remaining teaspoon of baking powder, walnuts, sugar, cinnamon and the egg

Mix until well combined

Grease and line a 1lb loaf tin

Pour in the cake mix and bake in the centre of the oven for 60 minutes
