Hello everyone, my latest winter warmer recipe is for this delicious Gluten and Dairy Free Tomato Soup w/ Grilled Cheese Croutons. It has been so cold recently I've been all about warm jumpers and soup recipes. I've recently taking up sewing and the last few items I've made have been nicely patterned thick sweatshirts which I've needed over the last few days.

This recipe is a fun take on a grilled cheese sandwich with a mug of tomato soup. It comes together within 30 minutes and is a perfect winter lunch idea.

Ingredients
    For the tomato soup:
  • 1 onion (diced)
  • 1 garlic clove (minced)
  • 1 tablespoon olive oil
  • 450 grams tomatoes (quartered)
  • 200 grams can of chopped tomatoes
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • salt and pepper (for seasoning)
  • 1 teaspoon sugar
  • 200 milliliters vegetable stock
  • 100 milliliters dairy free cream
  • For the croutons:
  • 4 slices of gluten free white bread
  • 4 slices of dairy free cheese
  • 2 teaspoons dairy free spread
Instructions
  1. Place the olive oil in a large pan over medium heat and add in the onion, garlic, oregano and basil, saute for 5 minutes

  2. Stir in the fresh and chopped tomatoes, sugar, herbs and seasoning, pour in the vegetable stock, cover the pan with a lid and bring to the boil

  3. Simmer for 20 minutes, blend the soup.  Stir in the dairy free cream and heat for a couple of minutes while you make the grilled cheese croutons.

  4. Heat a shallow pan over a medium heat and butter the bread with the dairy free spread

  5. Place two slices of bread, buttered side down, in the pan.  Top with the cheese and other slice of bread (butter side up).

  6. Cook for a couple of minutes each side until golden and the dairy free cheese has started to melt

  7. Remove from the pan, cut off the crusts and cut each toastie into 6 croutons

  8. Divide the tomato soup between four bowls and topped with the grilled cheese croutons
