Ingredients
  • 100 g dairy free spread
  • 50 g caster sugar
  • 1 egg
  • 75 g light brown sugar
  • 170 g gluten free plain flour
  • 1 tsp vanilla extract
  • 120 g dairy free chocolate chips
  • 12 raspberries
Instructions
  1. Preheat the oven to 180 oC and line two baking sheets with parchment paper

  2. Cream together the dairy free spread, caster sugar and brown sugar until light and fluffy

  3. Mix in the egg and gluten free flour

  4. Stir through the dairy free chocolate chips

  5. Divide the mixture into 12 balls of cookie dough and gently fold a raspberry into each one

  6. Place 6 cookies on each tray and flatten slightly

  7. Bake for 10-12 minutes

  8. Allow to cool on the baking sheet for 10 minutes and then transfer to a wire cooling tray
