Hello everyone, my Gluten and Dairy Free Masala Sweet Potato Soup is perfect for a cold November day. I know I say this all the time but at the moment this is definitely my favourite soup. Next on my list to try is a Pea and Pancetta Soup will post the recipe if it is successful.

I've been busy over the weekend adding in over a hundred of old recipes onto the website. I think I still have a couple of hundred to complete but everything should be back on the site by the end of the year.

Ingredients
  • 1 tablespoon olive oil
  • 1 onion (diced)
  • 1 teaspoon ground ginger
  • 2 garlic cloves (minced)
  • 1 tablespoon fresh coriander (chopped)
  • 3 tablespoons tikka masala curry paste
  • 2 tablespoons peanut butter
  • 650 grams sweet potatoes (peeled and chopped)
  • 400g chopped tomatoes
  • 700 milliliters vegetable stock
Instructions
  1. Add the olive oil, garlic and onion to a large pan over a medium heat

  2. Saute for 5 minutes and then stir in the ginger, coriander, curry paste and peanut butter

  3. Add in the sweet potato, vegetable stock and chopped tomatoes

  4. Bring to the boil and simmer for 20 minutes or until the sweet potatoes are tender

  5. Season to taste and then blend the soup until smooth
