Ingredients
  • 200 g gluten free spaghetti
  • 2 tbsp olive oil
  • 1 tbsp dairy free spread
  • 1 red onion (finely diced)
  • 2 garlic cloves (minced)
  • 1 red chilli (finely chopped)
  • 200 g hot smoked salmon
  • 1/2 lemon (zest and juice)
  • 2 tbsp fresh parsley (chopped)
  • salt and pepper (for seasoning)
Instructions
  1. Cook the gluten free spaghetti per the instructions on the packet, drain but reserve 3 tbsps of the water

  2. Heat the olive oil and dairy free spread in a shallow pan

  3. Add in the onion, garlic and chilli and cook for a couple of minutes

  4. Add the salmon, pasta and water

  5. Stir in the lemon juice, zest, parsley and season to taste

  6. Divide between two bowls and serve immediately
