Ingredients
  • 200 g gluten free pasta
  • 1 small onion (diced)
  • 1 tbsp olive oil
  • 2 garlic cloves (minced)
  • 30 ml vodka
  • 250 g canned chopped tomatoes
  • 8 cherry tomatoes (halved)
  • 1 tsp oregano
  • 80 ml dairy free cream
  • salt and pepper (for seasoning)
Instructions
  1. Cook the pasta according to the instructions on the packet
  2. Add the olive oil to a shallow pan over a medium heat
  3. Sauté the onions and garlic for 5 minutes
  4. Add in the tomatoes and cook for a couple of minutes
  5. Pour in the vodka and simmer for 5 minutes
  6. Stir in the dairy free cream, oregano and seasoning
  7. Simmer for 5 minutes
  8. Stir through the cooked pasta and serve immediately
