Welcome to my latest breakfast recipe for Gluten Free and Dairy Free Coconut and Mango Porridge.

Hope you are all having a good weekend.    I spent Saturday, out doors, with family.  Luckily it was cold but dry so we had a wander along the beach and then teated ourself to some fish and chips.  Luckily our favourite place always offers gluten free fish and chips:

Its definitely getting colder in Scotland and as well as looking out my winter clothes I've also started eating a fair amount of porridge for breakfast.  I made this delicious coconut and mango gluten free porridge the other day and have typed it up as a quick recipe.  If you also avoid gluten free oats then you might want to check out my polenta porridge recipes.

Ingredients
  • 40 grams gluten free oats
  • 300 milliliters water
  • 1 ground cinnamon
  • 1/2 mango (peeled and chopped)
  • 1 teaspoon maple syrup
  • 1 teaspoon desiccated coconut
Instructions
  1. Place the oats, cinnamon, maple syrup and water in a small saucepan over a medium heat
  2. Bring to the boil and simmer for 5 minutes
  3. Pour into a bowl
  4. Top with the mango and desiccated coconut
