Cream of Tomato Soup (Gluten & Dairy Free)

Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Cream of Tomato Soup.

It’s time for this week’s three gluten and dairy free recipes and the first one is an old favourite.  I’ve been looking at my soup recipes again as it is definitely the soup time of the year.

This soup was one of the first recipes I shared on the website when I started it over 4 years ago.  It had bad photography and had kind of fallen through the cracks.  I think it deserves some TLC so I’ve rephotographed it and I’m sharing it again.

It’s easy to make, cheap to put together, freezes well and tastes great - so its an all round winner in my opinion.  For this week’s packed lunch I’ve made some red Thai sweet potato soup.  What is your go to gluten and dairy free soup recipe?

Ingredients
  • 2 onions (diced)
  • 2 garlic (cloves, minced)
  • 2 tbsp olive oil
  • 900 g tomatoes (chopped)
  • 400 g can of chopped tomatoes (quartered)
  • 2 tsp oregano
  • 2 tsp basil
  • salt and pepper for seasoning
  • 1 tsp sugar
  • 400 ml vegetable stock
  • 250 ml dairy free cream (I used Alpro soya cream)
Instructions
  1. Place the olive oil in a large pan over medium heat
  2. Add in the onion, garlic, oregano and basil
  3. Saute for 5 minutes
  4. Stir in the fresh and chopped tomatoes, sugar, herbs and seasoning
  5. Pour in the vegetable stock
  6. Cover the pan with a lid and bring to the boil
  7. Simmer for 20 minutes
  8. Blend the soup
  9. Stir in the dairy free cream and heat for a couple of minutes
