Hello everyone, welcome to my latest recipe for Gluten and Dairy Free Naan Bread Pizza. If you are anything like me you find lunch the trickiest meal of the day for creating new free from ideas. I made these simple naan bread pizzas for lunch the other day and thought I would share it incase you are looking for inspiration. This also works well with gluten free pitta breads and you can add any topping you like on them.

I’m planning on just relaxing this weekend after a pretty tough week. I had vascular surgery on Wednesday and I’m feeling a little bit tender. I’ll just need to sit on the couch and get on with the updated website I’m building in the background.

Ingredients
    For the base:
  • 4 gluten free naan breads
  • For the pizza sauce:
  • 1 clove of garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 110 grams fresh (ripe tomatoes)
  • 200 grams tin of chopped tomatoes
  • 1 teaspoon sugar
  • 1 teaspoon smoked paprika
  • 1/2 tablespoon balsamic vinegar
  • salt and pepper (to taste)
  • For the toppings:
  • 200 grams dairy free cheese (grated)
Instructions
  1. To make the pizza sauce, place all the ingredients in a large saucepan and bring to the boil with the lid on
  2. Simmer the sauce for 30 minutes and then remove the lid and cook for another 30 minutes stirring occasionally
  3. The sauce should be thick but still juicy
  4. Preheat the oven to 180 oC
  5. Top the naan breads with the sauce and freeze any leftovers for future pizzas
  6. Sprinkle on the dairy free cheese and any other toppings of your choice
  7. Bake in the oven for 15 minutes
